Pizza Night Without the Guilt of Pizza Night!
Doesn’t that look great! I bet you don’t think it’s the least bit healthy, right?
Well, I’ll let you in on an little secret…it’s pretty darn healthy! I’m going to let you in on our little secret for those nights you are craving pizza…
Whole Wheat Crust Ingredients (makes one ~14″ pizza, easily doubled):
1 cup King Arthur White Whole Wheat Flour
1 cup King Arthur 100% Whole Wheat Flour
2/3 cup water (may need a little bit more, like 3/4 cup depending on how it’s kneading)
0.5 tsp salt
1 tsp dryactive yeast
We use a bread machine to knead our dough for us, if you don’t have one, you can do it by hand…
If using a bread machine, use the 1 lb setting, put all the ingredients per your manufacturer guidelines and let it run on the pizza dough mode…it takes ~ 1:30 hours on our machine.
Once the dough is done, then comes the fun! Preheat your oven to “hot”, we usually preheat to 500F.
Place some bread flour on your working surface to help prevent sticking and use a rolling pin to roll out the dough to approximately 1/8″ thick (i.e. very thin). Be sure to get out all of the air bubbles, this dough recipe is very prone to air bubbles as you will see later (it’s the really, really fun part!).
Once the dough is rolled out, transfer to whatever paddle or utensil you are going to place the pizza into the oven with…you are now ready to assemble your pizza!
~2 tbs tomato sauce or puree
pizza seasoning to taste (we use Penzey’s Pizza Seasoning)
~1-1.5 cups reduced fat mozzarella (we normally use borden or horizon)
toppings of choice (we normally do green peppers and mushrooms)
Evenly spread ~2 tbs of tomato sauce or puree onto uncooked crust…then sprinkle on pizza seasoning to taste.
Top with ~3/4 cup of cheese and toppings, reserve the final bits of cheese to place on top of toppings…below is our pizza ovenready!
Cook at “hot” for 8 minutes or until of desired “doneness”
Don’t be tempted to cut the pizza too soon, the cheese will slide off! This provided a great opportunity for pictures and reminiscing childhood…
Remember those air bubbles? They turn into the bubbles (or mountains) that we loved to pop as a child…
A beautiful mushroom between the peaks of mountains…so romantic…

Slice up the pizza, it makes 8 slices for us and enjoy guilt-free!
