Shredded Beef Quesadilla

Utilizing Leftovers the best we can!

Last night I made shredded beef for our arepas and had a bunch leftover (on purpose, of course!). After my 6 mile run, I needed more fuel to keep going and needed something quick and easy. Thus, the 5 minute quesadilla! I ate half just after my run and the other an hour or so later.


1 burrito sized tortilla (I used La Tortilla Factory Multigrain)
~2 oz of shredded beef
A soft Mexican Cheese or Soy substitute (I used Queso Fresco since I already had some shredded from last night)
Diced tomato (optional)
Guacamole or Avocado spread (optional, I used Simply Avo since we had some in the fridge)

Assemble the quesadilla, beef on bottom, followed by tomatoes and cheese)

Slice and top with guac if desired!
